Vibrant Summer Salad with a Sesame Tahini Dressing
In a jar, add all the ingredients and whisk until it’s smooth. Add more water or tahini to the dressing if you prefer a thinner or thicker texture. Taste and adjust seasoning to your liking.
You can add crispy tofu, grilled chicken or Salmon -this salad pairs well with a lot of different proteins.
Recipe Idea: Make a cold noodle salad by replacing the quinoa with soba noodles and adding thinly sliced jalapeños. For the dressing, replace the tahini for peanut butter. and add some soy sauce - now you got yourself a delicious bursting with flavor cold noodle salad.
