Vegan Maple Banana Bread

Healthy-ish Maple Banana Bread that is refined-sugar free, dairy-free and vegan.

Ingredients
  

  • 1/2 cup maple syrup
  • 3 ripe bananas
  • 1/4 cup coconut sugar ( or additional maple syrup)
  • 1/4 cup almond milk
  • 1 tablespoon ground cinnamon
  • 2 cups self rising flour ( or all-purpose flour- read note in the blog about replacement)
  • 1/2 teaspoon baking soda
  • 3/4 cup grape-seed oil ( or any neutral oil)
  • 1/4 teaspoon ground nutmeg

Instructions
 

  • Preheat Oven 355 F
  • In a large bowl, mash the ripe bananas really well. Make sure there is minimal lumps.
  • Add the grape-seed oil and mix well. Then add the maple syrup, ground cinnamon, almond milk and coconut sugar and mix.
  • Sift in the dry ingredients in two parts and stir until the batter is lump free.
  • Grease and line a loaf pan with parchment paper. Pour the batter into loaf pan and spread evenly. Top the batter with semi-sweet chocolate chips. Place the pan on the middle rack and bake for about 1 hour -1 hour and 10 minutes.
  • Allow the banana bread to cool completely before cutting into the bread.
