Vegan Maple Banana Bread
Healthy-ish Maple Banana Bread that is refined-sugar free, dairy-free and vegan.

- 1/2 cup maple syrup
- 3 ripe bananas
- 1/4 cup coconut sugar ( or additional maple syrup)
- 1/4 cup almond milk
- 1 tablespoon ground cinnamon
- 2 cups self rising flour ( or all-purpose flour- read note in the blog about replacement)
- 1/2 teaspoon baking soda
- 3/4 cup grape-seed oil ( or any neutral oil)
- 1/4 teaspoon ground nutmeg
Preheat Oven 355 F
In a large bowl, mash the ripe bananas really well. Make sure there is minimal lumps.
Add the grape-seed oil and mix well. Then add the maple syrup, ground cinnamon, almond milk and coconut sugar and mix.
Sift in the dry ingredients in two parts and stir until the batter is lump free.
Grease and line a loaf pan with parchment paper. Pour the batter into loaf pan and spread evenly. Top the batter with semi-sweet chocolate chips. Place the pan on the middle rack and bake for about 1 hour -1 hour and 10 minutes.
Allow the banana bread to cool completely before cutting into the bread.
