Crispy Cauliflower Steak Burger

Ingredients
  

Spiced Batter

  • 1 cup all purpose flour
  • 1 cup plant based milk
  • 1/3 cup water
  • 1/3 cup hot sauce or barbeque sauce
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • salt, to taste
  • black pepper, to taste
  • 2 teaspoons cumin powder
  • 2 teaspoon paprika powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne powder (optional)

Crispy Cauliflower Steak burger

  • 2 &1/2 cups Panko bread crumbs
  • 4 tomatoes slices
  • 2 medium or large cauliflower heads
  • Boar's Head Fiery Chipotle Gourmaise or any spiced mayo
  • 2 large ripe avocado, mashed
  • 4 slices of red onion
  • pickled jalapeno
  • your favorite pickles
  • butter lettuce
  • 4 brioche buns or a vegan burger bun

Instructions
 

Spiced Batter

  • In a large bowl, add the milk, flour, water, barbeque or hot sauce, salt, black pepper, garlic powder, onion powder, paprika, smoked paprika, cumin powder, cayenne powder and mix until the batter is smooth and lump free.
  • Note: If you want to loosen the batter, add additional water or milk. If you want to thicken the batter, add additional flour. This depends on your preference. I like the batter to be on the semi thick side,since it helps with flavoring the cauliflower and helps the panko bread crumbs stick to it better.
    Also, feel free to add any additional spices to your liking.

Crispy Cauliflower Steak burger

  • Preheat Oven 350 F
  • Cut off the stem and leaves from the cauliflower head. With a sharp knife, hold your Cauliflower upright and cut about 1-inch thick "steaks". Do not worry if some cauliflower pieces comes off. You should get at least 2 if you use a medium or large size cauliflower head.
    Make sure to leave the large stem at the bottom, since it helps to hold together the "steaks". Use the remaining cauliflower for another recipe.
  •  Dip each cauliflower steak into the batter, making sure they are completely coated.
  • In a large bowl, pour the panko bread crumbs and dip each "steak" into the bread crumbs making sure they are coated well.
  • Line a baking sheet with parchment paper and place the cauliflower steaks and brush or spray some olive oil. Sprinkle of salt over each steak.
  • Place in the oven on the middle rack and bake for 25-30 minutes. Flipping them half way through.
  • Optional: After baking, you can brush the cauliflower steaks with the BBQ sauce or hot sauce. Then, place cauliflower steaks back in the oven and bake again for additional 10-15 minutes at 350 °F.
  • Now, serve the crispy cauliflower "steaks" on brioche burger buns with mashed avocado, chipotle mayonnaise, lettuce, pickled jalapeno, pickles, tomato and red onion slices. SO good - enjoy!
