1/2cup cooked organic quinoa ( I used rainbow heirloom quinoa)
1can (15 oz) Organic Black Beans
1/2cup Panko Bread Crumbs
1/4cup water
2 - 3tablespoons tomato paste
2 & 1/2tablespoons olive oil if you are calorie conscious, reduce the oil amount and substitute with water.
1/4 cup grated yellow onion
1/3cup chopped fresh parsley
Spices
1tsp ground paprika
1tsponion powder
1tspgarlic powder
1tspdried oregano
1/2tspcayenne powder (optional)
1/4tsp ground turmeric
1tspcumin powder
1/4tsp smoked paprika (optional)
salt to taste
black pepper to taste
Instructions
In a large bowl, add your rinsed organic black beans, cooked quinoa, tomato paste, olive oil, water, grated onion, all the seasoning and the panko breadcrumbs. Form four to five patties.Tip: Before forming your patties, taste the mixture and add additional seasonings to your liking.
Brush some olive oil on each side of the patties. You can grill or bake the patties. I grilled the patties in a grilled pan and cook on medium heat for about 3-5 minutes per side. Cooking time all depends on the thickness of your patties.
Assemble your burger with a hamburger, brioche bun or pretzel bun and all your favorite toppings. A chipotle mayo is a great sauce to pair with this Black Bean & Quinoa burger.
Notes
These burgers are freezer friendly too. Here is how to freeze the burgers -1. Cook your burgers. Then, place your leftover cooked burgers ( the burgers should be at room temperature before placing in the freezer) on a clean flat tray and place the tray in the freezer until frozen. This make take about 3 hours.2. Remove the tray from the freezer and transfer all the burgers into an airtight freezer safe container. Store the burgers in the freezer for up to 1 month.
