Kofta كفتة Kebab Sheet Pan Dinner. Ground beef seasoned with mediterranean spices, herbs, minced onion, garlic and moulded onto a skewer. Baked on a bed of cherry tomatoes and red onions — this flavor packed kofta is a must try!


This kofta recipe is very easy to put together. I don’t eat meat often but when I do, it’s always these delicious koftas. I love making sandwiches or enjoying them with basmati rice on the side. SO GOOD. Since this is a sheet pan dinner, you can add any kind of vegetable you want — but I would highly recommend that you try this cherry tomato and red onion combo. It is really delicious.

Koftas should be loaded with Herbs and Spices.

These koftas are seasoned with various mediterranean spices, fresh herbs, minced onion and garlic. Kofta needs to be packed with flavor. It is the only way.

Pour a Simple Sauce to get really Juicy Koftas

If you have had issues in the past with baked koftas coming out dry, then try pouring a simple sauce before baking them. Some tomato paste, water and lemon juice. That is it. Pour it over the koftas just before baking them and this will give you a really juicy kofta.

Ingredients
  • 1.3 pound ground meat
  • 1 medium onion grated
  • 5 cloves of minced garlic
  • 1/2 bunch chopped parsley
  • 1 teaspoon oregano (dried or fresh)
  • 1&1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoon cumin powder
  • 1&1/2 teaspoon grounder coriander
  • 1/2 teaspoon cayenne powder
  • 1/2 teaspoon red crushed pepper flakes
  • 3 tablespoons olive oil
  • 1/2 teaspoon sumac
  • 1/2 teaspoon paprika powder
  • 2 cups cherry tomatoes
  • 1 large red onion thinly sliced
Sauce
  • 1 tablespoon tomato paste
  • 2/3 cup water
  • juice of one lemon

  • 1/2 teaspoon paprika powder
  • 2 cups cherry tomatoes
  • 1 large red onion thinly sliced
Sauce
  • 1 tablespoon tomato paste
  • 2/3 cup water
  • juice of one lemon
Instructions
  1. In a large bowl, add the ground beef, all the spices, finely chopped parsley, grated onion, minced garlic, olive oil and mix.
  2. Pre heat oven 400 F
  3. Mould meat onto skewers and refrigerate for 15 minutes.
  4. In large pan, add the cherry tomatoes, red onion, some olive oil and salt and pepper.
  5. Place the skewers on top. In a cup, add tomato paste, water, lemon juice and mix. Pour the sauce over the kofta.
  6. Place on the middle rack in the oven and bake for 25 minutes.
  7. Serve with fries, tahini and rice or you can make sandwiches. Enjoy!
