This beautiful, easy to make and delicious salad in one my favorites to make this spring. I have been making it at least once a week pairing it with various proteins: grilled chicken, baked salmon, or plant protein (black beans or chickpeas). The salad is dressed in an herby, tangy, creamy green goddess dressing that is so addicting. I love making a large batch of the dressing and I’ll enjoy it with raw veggies as a snack — So So Good!
Your Salad Should Never Look Boring! Try and Get as Much Color in the Salad
I LOVE SALADS!
I always tell my friends and family that “you eat with your eyes first” so if your salad does not look fresh, vibrant and colorful –then you need to start getting as much color in there and you will start to LOVE SALADS too! There are so many ways to make a really flavorful and a hearty salad and the best tip to getting more veggies in during the week is to use ingredients you actually love!
When the weather gets warmer, I make more salads because they are just easy to make and a great way to incorporate more fresh wholesome organic ingredients in your diet. I have been making a hearty salad a couple times a week. I will have it for lunch or dinner and add a protein on the side : grilled chicken, baked salmon or plant protein ( black beans or chickpeas). I love to try different types of salads so I am never “sick of them”!
Vibrant, Fresh and Delicious
I always start my salad with a base and for today’s salad, I used Earthbound Farm Organic Sweet and Crispy Romaine, Broccoli Florets and Snap Peas. Other ingredients I added to the salad:
- cooked beets
- rainbow radishes
- avocado
- feta
- sunflower seeds
- Optional: protein (shrimp, salmon, chicken, or plant protein)
For the Broccoli, I cut them into small pieces and added them raw. But if you do not like eating them raw, I recommend steaming them for a bit to just soften it and break down the tough plant fiber that is found in cruciferous vegetables like broccoli. This will help make the broccoli a lot easier to chew and digest.

Green Goddess Spring Salad
Ingredients
Green Goddess Spring Salad
- 7 ounce Earthbound Farm Organic Sweet & Crisp Romaine
- 1 cup Earthbound Farm Organic Snap Peas
- 8 pieces of Earthbound Farm Organic Broccoli Florets chopped
- 1 cup cooked beets cubbed
- 1/4 cup organic sunflower seeds
- 3 tablespoons feta crumble optional
- 6 rainbow radishes thinly sliced
- 1 large avocado cubed
Green Goddess Dressing
- 1/2 cup yogurt
- 1/3 cup mayo
- Salt to taste
- Freshly ground Black pepper to taste
- ½ teaspoon ground paprika
- Juice of 1/2 lemon
- 4 tablespoons of fresh tarragon leaves
- 1/2 cup fresh parsley leaves
- 1/3 cup fresh dill
- 3 tablespoons of chopped chives
- 2 tablespoons olive oil
- 4 tablespoons of water add more or less depending on how thick or thin you like your dressing to be
- 1 medium garlic clove
Instructions
Green Goddess Dressing
- Add all the ingredients to a blender or food processor. Blend until smooth — make sure to taste and add additional salt,black pepper, or other spices to your liking. This dressing will keep well in an airtight container in the fridge for up to 5 days.
Green Goddess Salad
- In a bowl, add the chopped romaine, snap peas, chopped broccoli, beets, radishes, avocado, sunflower seeds, and feta crumble. Dress the salad with the green goddess dressing – Enjoy
