Sesame Tahini Dressing
- juice from 1 large lime
- 1/3 cup creamy organic tahini, unsalted
- 3-4 tbsps water
- 1 large garlic clove, minced
- salt, to taste
- black pepper, to taste
- 1/2 tbsp maple syrup adjust sweetness to your liking
- 1/2 tbsp sesame oil

- carrots, shredded
- red cabbage, sliced thinly
- cilantro
- avocado
- cashews, toasted
- carports, sliced
- cooked quinoa I used rainbow
Instructions

- In a jar, add all the ingredients and whisk until it’s smooth. Add more water or tahini to the dressing if you prefer a thinner or thicker texture. Taste and adjust seasoning to your liking.
- You can add crispy tofu, grilled chicken or Salmon -this salad pairs well with a lot of different proteins.
- Recipe Idea: Make a cold noodle salad by replacing the quinoa with soba noodles and adding thinly sliced jalapeños. For the dressing, replace the tahini for peanut butter. and add some soy sauce – now you got yourself a delicious bursting with flavor cold noodle salad.
