This healthy-ish Maple Chocolate Banana Bread recipe is as good as a banana bread can get. Its is dairy-free, refined sugar-free, and vegan( egg-less). I have made this banana bread twice this month and for good reason. It is extra moist, fluffy and dense ( in the best way possible). A slice paired with a cup of coffee in the morning is the best way to start off your day.
Important Ingredients
Maple Syrup. The star ingredient in this recipe is the addition of the maple syrup. It gives a caramel flavor with overtones of toffee -making the banana bread just perfect!!!
Self-rising Flour. The first time I tested this recipe out, I used all-purpose flour and was not pleased with the texture of the bread. So I ended up trying the recipe out again with self-rising flour and was very pleased with the texture. Because this recipe does not have eggs nor a flax seed “egg”, self rising flour did the trick! But if you can not get your hands on self-rising flour, just replace it with equal parts all-purpose flour and add 2 teaspoons of baking powder.
Vegan Maple Banana Bread
Ingredients
- 1/2 cup maple syrup
- 3 ripe bananas
- 1/4 cup coconut sugar ( or additional maple syrup)
- 1/4 cup almond milk
- 1 tablespoon ground cinnamon
- 2 cups self rising flour ( or all-purpose flour- read note in the blog about replacement)
- 1/2 teaspoon baking soda
- 3/4 cup grape-seed oil ( or any neutral oil)
- 1/4 teaspoon ground nutmeg
Instructions
- Preheat Oven 355 F
- In a large bowl, mash the ripe bananas really well. Make sure there is minimal lumps.
- Add the grape-seed oil and mix well. Then add the maple syrup, ground cinnamon, almond milk and coconut sugar and mix.
- Sift in the dry ingredients in two parts and stir until the batter is lump free.
- Grease and line a loaf pan with parchment paper. Pour the batter into loaf pan and spread evenly. Top the batter with semi-sweet chocolate chips. Place the pan on the middle rack and bake for about 1 hour -1 hour and 10 minutes.
- Allow the banana bread to cool completely before cutting into the bread.
