Soft and fluffy Za’atar rolls that are so easy to make and seriously going to be your new carb obsession. I have been snacking on these all weekend. These Za’atar rolls are the perfect breakfast side and a delicious snack throughout the day. These rolls can also be filled with cream cheese Za’atar mixture. This recipe is versatile and there are so many different fillings you can make these rolls with.
Za’atar is a Middle Eastern mixed spice that is versatile and be can eaten on its own as a dip with some olive oil or used to season any kind of protein.

- 2 cups All Purpose Flour
- 1 cup bread flour
- 6 tablespoons olive oil
- 1/2 teaspoon salt
- 2 teaspoons Active Rapid Rise Yeast
- 1/2 cup warm water
- 1/2 cup milk ( plant based or dairy will both work)
- 1/4 cup Za’atar Mixture
- 1/3 cup olive oil ( you may need additional oil, it really depends on how thick or thin you want the consistency to be)

- In a small bowl, add 1/4 cup warm water and yeast and set aside for 5 minutes.
- In a medium bowl, add the flour, salt, milk, oil , yeast mixture and blend. Place the sticky dough on a floured surface and knead the dough for 10 minutes or until smooth.
- Place the dough in an oiled bowl and cover well. Set the bowl aside in a warm place for about 2-3 hours or until the dough doubles in size.
- When the dough has doubled in size, punch down the dough. Roll out the dough onto a floured surface into a rectangle.
- Pour the Za’atar mixture ( Za’atar and oil) all over the dough spreading it well.
- Roll the dough up into a log. Cut the dough into 16 to 18 pieces.
- Place the Za’atar rolls onto a pan lined with parchment paper. Preheat oven 350 Degrees and cover the pan with a cloth and set aside for 1 hour in a warm place so the dough can proof a little more.
- After 30 minutes, brush some olive oil or melted butter over the rolls.
- Place pan in the oven for 30 minutes or until golden around the edges.
- Set the rolls aside to cool before enjoying these delicious za'atar rolls!

Thank you for this recipe! These are amazing. The instructions are straightforward and simple. The results were delicious. Some of the filling slid off while rolling, but I was able to scoop it up and spoon it over the rolls after the second rise.
