Garlicky Herby Spicy Za’atar Rub
I have never been so excited to share a recipe that I think is pretty incredible. All credit goes to the Za’atar rub that elevates the Cauliflower to whole another level. If you do not know what Za’atar is, it is just popular middle eastern mixed spiced that can be enjoyed on its own with a little olive oil and bread or used as a seasoning. Even if you are a meat lover, I think incorporating more plant-based foods, in general, is just better for you and cauliflower should be on the top of your list. Cauliflower is a cruciferous vegetable, alongside kale, broccoli, brussels sprouts, bok choy, cabbage, collard greens, rutabaga, etc. Cruciferous vegetables are superfoods that contain a wealth of nutrients and antioxidants ( medicalnewstoday.com).

What is cool about this sandwich is that the cauliflower holds its own. You won’t feel like you are compromising anything, it is just that good! The secret is being generous with that garlicky herby spicy za’atar rub on the cauliflower! We want every bite of that sandwich to satisfy all your taste buds!
Creamy Garlic Dill Sauce
Also, I found a plant-based sour cream that is organic and soy-free ( I do not like soy it is processed and a big NO). The base of the sour cream is made out of organic butter beans, organic oats, and coconut oil and some other ingredients. I used this sour cream to make the creamy sauce and was super impressed with the taste.
If you want to try and reduce your carb intake, omit the bread and enjoy the cauliflower on a bed of the creamy garlic dill sauce and enjoy! The full recipe is below! I hope you try this recipe and enjoy it as much as I do!

- 1 medium cauliflower head ( this should yield three cauliflower steaks)
- 1 tomato
- 1 pickle
- butter lettuce ( any lettuce of your choice)
- 1 small red onion
- 3 wholewheat buns
- 2 tablespoons za'atar seasoning
- 1/2 teaspoon smoked paprika
- 1 teaspoon sea salt
- 1/2 teaspoon Aleppo crushed pepper
- 5 minced garlic cloves
- 1/2 teaspoon black pepper
- 1 teaspoon lemon juice
- 1 teaspoon dry bay leaves (or fresh)
- 1 teaspoon dry parsley ( or fresh)
- 1/4 cup olive oil
- 3 tablespoons plant based sour cream ( or regular sour cream)
- 3 springs finely chopped dill
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon lemon juice
- 3 minced garlic cloves

- Preheat Oven 425 degrees. Line a baking sheet with parchment paper.
- Cut off the stem and leaves from the cauliflower head. Hold your Cauliflower upright and cut about 1-inch thick "steaks". Do not worry if some cauliflower pieces comes off. You should get at least 3 if you use a medium size cauliflower.
- In a small bowl, mix all the Za'atar rub ingredients together. Rub each cauliflower "steak" with the rub mixture. Drizzle a little of olive oil on each side and additional salt and black pepper and place in the oven to roast for about 15 minutes on each side.
- While the cauliflower steaks roast, begin assembling all your sandwich components. Use whatever you prefer, I used tomatoes, red onion, pickles, and butter lettuce.
- In a small bowl, mix all the Creamy Garlic Dill Sauce ingredients together and set aside.
- When the cauliflower is soft and caramelized around the edges remove from he oven and allow to cool as you assemble your sandwich.
- Use whatever sandwich bun you prefer, and begin with a generous layer of the Creamy Garlic Dill Sauce, place one cauliflower steak on top, add tomato, red onions, lettuces and pickles.
- That is it, enjoy with a side of fries!
