1/2cup cooked quinoa
1cup baby arugula
1/3cup black beans
1/4cup sliced cucumber
1grilled corn on the cob
Chili Lime Shrimp
8-9Large Peeled Shrimp
1&1/2tsppaprika powder
1tspcumin powder
2tbspchopped parsley
2garlic cloves, minced
1tbspolive oil
1&1/4tspchili powder
salt to taste
black pepper to taste
juice of 1 lime
Instructions
In a medium-sized bowl, add the lime juice, minced garlic, parsley, olive oil, chili powder, cumin, paprika, black pepper, and salt. Add the shrimp and toss to coat. Let the shrimp marinate for about 10 minutes.
You can either grill or pan fry the shrimp. I grilled the shrimp and cooked for about 2-3 minutes on each side. Note: Cooking time will vary based on the size of the shrimp.
Time to assemble: In large serving plate, add the romaine lettuce from the Taylor Farms Mexican Caesar Salad, top it with some arugula, quinoa, black beans, cucumbers, corn, chili lime shrimp and croutons and cheese from the Taylor Farms Mexican Caesar Salad Kit.
I like to serve the dressing on the side until I am ready to eat!
