Mexican Caesar Salad Bowl

Ingredients
  

  • 1 Taylor Farms Mexican Caesar Salad Kit https://www.taylorfarms.com/products/mexican-style-caesar-salad-kit/
  • 1/2 cup cooked quinoa
  • 1 cup baby arugula
  • 1/3 cup black beans
  • 1/4 cup sliced cucumber
  • 1 grilled corn on the cob

Chili Lime Shrimp

  • 8-9 Large Peeled Shrimp
  • 1&1/2 tsp paprika powder
  • 1 tsp cumin powder
  • 2 tbsp chopped parsley
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1&1/4 tsp chili powder
  • salt to taste
  • black pepper to taste
  • juice of 1 lime

Instructions
 

  •  In a medium-sized bowl, add the lime juice, minced garlic, parsley, olive oil, chili powder, cumin, paprika, black pepper, and salt. Add the shrimp and toss to coat. Let the shrimp marinate for about 10 minutes.
  • You can either grill or pan fry the shrimp. I grilled the shrimp and cooked for about 2-3 minutes on each side.
    Note: Cooking time will vary based on the size of the shrimp.
  • Time to assemble:
    In large serving plate, add the romaine lettuce from the Taylor Farms Mexican Caesar Salad, top it with some arugula, quinoa, black beans, cucumbers, corn, chili lime shrimp and croutons and cheese from the Taylor Farms Mexican Caesar Salad Kit.
  • I like to serve the dressing on the side until I am ready to eat!
