How To Make Pasta Puttanesca

Ingredients
  

  • 5 cloves of garlic
  • 1/2 cup sun dried tomato paste or finely chopped sun-dried tomato
  • 1 cup olives i used green olives and kalamata olives
  • 1 cup pasta water
  • 5 tablespoons olive oil extra virgin
  • 1 teaspoon red crushed pepper
  • 3 tablespoons capers
  • 1 teaspoon anchovy paste optional
  • freshly grated parmesan fo serving
  • 1 pound spaghetti
  • 1/2 cup diced cherry tomatoes

Instructions
 

  • Cook the pasta according to the package instructions. Make sure to reserve 1 cup of pasta water.

Sauce

  • On medium to low heat, add olive oil, garlic and red crushed pepper and allow to cook for 1 minute to get the oil fragrant.
  • Then add the anchovy paste and sun-dried tomato paste (or finely chopped sun dried tomato)
  • Then and the cherry tomatoes and cook for 2-3 minutes.
  • Then add the pasta water and stir. Add the olives and capers and bring to a boil then lower the heat and allow to simmer for 12-15 minutes.
  • Top the pasta with freshly grated parmesan and chopped parsley. Enjoy!
