This delicious and easy to make Mexican Salad bowl is packed with so much flavor and can be enjoyed for lunch or dinner! The salad bowl comes together so quickly with the help of Taylor Farms Mexican Caesar Salad kit. The Taylor Farms Mexican Caesar Salad kit is a favorite. The salad combines crisp romaine lettuce with cheesy Monterey Jack croutons, pepitas and nutty parmesan cheese all covered with a zesty Mexican Caesar dressing. The salad kit on its own is GREAT but if you want to take it to the level and pack it with even more delicious veggies and protein, add grilled chili lime shrimp, quinoa, black beans and any other veggies that you like! Chili Lime Shrimp
The chili lime shrimp is one of my favorites to top on salad sand bowls. Feel free to choose any other protein you like but I chose shrimp because shrimp cooks very fast and this meal is all about a no fuss and easy to make dish. I marinated the shrimp in lime juice, chili powder, garlic, olive oil, cumin, paprika, parsley, salt and black pepper.
Time to Assemble
I let the shrimp sit in the marinate for about 10 minutes and then grill the shrimp on each side for 2-3 minutes. Now it is just time to assemble everything. I always have cooked quinoa in the fridge, but if you have leftover basmati rice, you can add some chopped fresh cilantro and lime juice to elevate the rice. This salad bowl can be adjusted to your preference and whatever you have available in your fridge

Mexican Caesar Salad Bowl
Ingredients
- 1 Taylor Farms Mexican Caesar Salad Kit https://www.taylorfarms.com/products/mexican-style-caesar-salad-kit/
- 1/2 cup cooked quinoa
- 1 cup baby arugula
- 1/3 cup black beans
- 1/4 cup sliced cucumber
- 1 grilled corn on the cob
Chili Lime Shrimp
- 8-9 Large Peeled Shrimp
- 1&1/2 tsp paprika powder
- 1 tsp cumin powder
- 2 tbsp chopped parsley
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1&1/4 tsp chili powder
- salt to taste
- black pepper to taste
- juice of 1 lime
Instructions
- In a medium-sized bowl, add the lime juice, minced garlic, parsley, olive oil, chili powder, cumin, paprika, black pepper, and salt. Add the shrimp and toss to coat. Let the shrimp marinate for about 10 minutes.
- You can either grill or pan fry the shrimp. I grilled the shrimp and cooked for about 2-3 minutes on each side. Note: Cooking time will vary based on the size of the shrimp.
- Time to assemble: In large serving plate, add the romaine lettuce from the Taylor Farms Mexican Caesar Salad, top it with some arugula, quinoa, black beans, cucumbers, corn, chili lime shrimp and croutons and cheese from the Taylor Farms Mexican Caesar Salad Kit.
- I like to serve the dressing on the side until I am ready to eat!
