5 Minutes to Prep and 15 Minutes to Bake
I love this method of baking salmon in parchment paper because of how easy it is to assemble. Everything is baked in a parchment paper pouch and it is pretty much mess free. Since the parchment pouch helps to store all the steam, it bakes the salmon faster and it yields a really moist flakey salmon.
Salmon, Cod or Shrimp
If you do not have salmon, you can use shrimp, cod and even thin slices of chicken breast will work great as well. Next, the veggies and herbs and you can use whatever you have available. Since we are all quarantining, it is important to be flexible and creative in what to cook. For me, I did not have a lot of fresh vegetables ( my fresh produce order comes in every Friday from freshharvest.com) but if you do, add some thin slices of carrots, bell peppers or mushrooms. Since the salmon will cook in about 15 minutes, you want to make sure the vegetables are thinly sliced so that they are fully cooked when the salmon is done.
Lemon, Parsley, Garlic, Capers
I started with a bed of parsley, slices of lemon and capers and placed the salmon on top. I seasoned the salmon with salt, pepper, minced garlic and little bit of red chili pepper. I then topped the salmon with additional slices of lemon and capers — that is it! This will take you 5 minutes — maybe even less to put together. Before I sealed everything, I added a couple slices of butter but you can use olive oil or avocado oil.
Place the salmon in the oven to bake on 400 F for about 15 minutes.

- 3 minced cloves of garlic
- 3 tablespoons unsalted butter ( olive oil or avocado oil)
- salt ( to taste)
- black pepper ( to taste)
- chili pepper (optional)
- 4 slices Lemon
- 1 tablespoon capers
- 1 fillet salmon
- 1/4 cup fresh parsley

- Preheat oven 400 F
- Fold a 15x16 inches of parchment paper in half. Then open it and begin assembling everything on one side of the parchment paper.
- Add the parsley, capers and 2 lemon slices.
- Place the salmon fillet on top and season with salt, black pepper, chili pepper and minced garlic. I added additional lemon slices and capers on top. Add butter or oil over the salmon.
- Then place the other half of the parchment paper over the salmon. Begin pinching the open sides until you have sealed everything well. Note: You want to make sure you sealed it really well so that the steam does not escape.
- Place the parchment pouch on a baking sheet and bake for about 15 -18 minutes.
- Before serving, top with fresh herbs and enjoy!
