Pasta puttanesca is an Italian Naples style pasta dish that can be made in less than 30 minutes and only requires a couple of ingredients. The pasta sauce is so fragrant and is bursting with so much flavor from the olives, garlic, capers, anchovies and tomatoes. This savory, sweet and tangy pasta dish is the perfect weekend comfort dish.

Ingredients
- 5 cloves of garlic
- 1/2 cup sun dried tomato paste or finely chopped sun-dried tomato
- 1 cup olives i used green olives and kalamata olives
- 1 cup pasta water
- 5 tablespoons olive oil extra virgin
- 1 teaspoon red crushed pepper
- 3 tablespoons capers
- 1 teaspoon anchovy paste optional
- freshly grated parmesan fo serving
- 1 pound spaghetti
- 1/2 cup diced cherry tomatoes
Instructions
- Cook the pasta according to the package instructions. Make sure to reserve 1 cup of pasta water.
Sauce
- On medium to low heat, add olive oil, garlic and red crushed pepper and allow to cook for 1 minute to get the oil fragrant.
- Then add the anchovy paste and sun-dried tomato paste (or finely chopped sun dried tomato)
- Then and the cherry tomatoes and cook for 2-3 minutes.
- Then add the pasta water and stir. Add the olives and capers and bring to a boil then lower the heat and allow to simmer for 12-15 minutes.
- Top the pasta with freshly grated parmesan and chopped parsley. Enjoy!

You can just do it with canned anchovies instead, they de solve in the oil.
