Shrimp scampi is one of my favorite dishes to make. Scampi is made with large shrimp that is seasoned, then cooked and generously smothered in butter, garlic, red crushed pepper, chopped parsley, shallots and some lemon juice. All those flavors come together in less than 30 minutes and dinner is ready. It is a dish that is made with simple ingredients, yet makes a restaurant quality elevated dish. I do not drink juice often and my preferred choice of drink for dinner is always some sort of flavored water and S.Pellegrino Essenza has been my go-to. Green Shrimp Scampi
If you have tried Shrimp scampi before, then you know that it is a clear light colored sauce. But for today’s recipe, I switched it up. You get all the flavors of a traditional shrimp scampi, but with a delicious green twist. The base of the green sauce is a lot of parsley thrown into a blender with olive oil, lemon juice, lemon zest, shallot, jalapeño, salt, pepper, and garlic. Super easy to put together and the green color is just so vibrant! For the shrimp, I used wild caught large shrimp and decided to keep the shell on, but you can feel free to remove it before cooking it. Ingredients
- 1 pound large wild caught shrimp
- 2 bunches of parsley
- 4 cloves of garlic
- salt and pepper to taste
- 1 jalapeno
- 5 tablespoons of unsalted butter
- 1/4 cup of olive oil
- 2 dried red chili peppers
- 1/2 teaspoon of lemon zest
- juice of 1 lemon
- 1 shallot
Instructions
In a food processor, blend the parsley, jalapeno, garlic, shallot, oil, lemon juice, lemon zest, salt and pepper until smooth.
In a medium pan, cook the shrimp trying to get a nice color on them ( about 1-2) minutes and remove and set aside. In the same pan, add the unsalted butter and the green chili sauce and cook for a couple of minutes then add the shrimp and finish cooking them for another 1 minute.
