This fig almond cake topped with sweet sticky figs and served with a drizzle of sweet floral honey is the perfect cake that celebrates fig season. I love enjoying this with tea or coffee. This is also perfect to serve at your next brunch or dinner party.

Equipment
- 9 inch springform round cake pan
Ingredients
- 1 cup Organic All Purpose Flour ( 134 -135 grams)
- 1/2 cup Almond Flour (71 grams)
- 3 large eggs
- 1/2 cup plus 2 tbsps of Granulated Sugar
- 1/3 cup olive oil
- 6 tbsp unsalted butter melted
- 2 tsps baking powder
- 1 tsp baking soda
- pinch of salt
- 2 tsps vanilla extract
- 1/2 – 1 tsp almond extract optional, but recommended
- 7-10 fresh ripe figs ( the number of figs will depend on the size of the figs) stems trimmed
Topping
- floral honey for drizzle
- 1 tbsp sugar
- sliced almonds optional
Instructions
- Preheat Oven at 350F
- Cut the figs in quarters through the stem. You can also slice them in half. Set aside.
- In a small bowl, whisk together the flour, almond flour, baking powder, baking soda and salt. Set aside.
- In a large bowl, add the sugar, eggs, vanilla extract and almond extract. Using a whisk or a hand held mixer, mix for 2 minutes or until mixture is light and fluffy.
- Add the melted butter and oil, whisk until well combined.
- Sift in the dry ingredients ( baking powder, baking soda, salt, all purpose flour and almond flour) and mix until batter is smooth and lump free. Make sure to not over mix the batter.
- Pour the batter into a lined and buttered 9 inch round spring form baking pan.
- Arrange the figs all over the cake. See image above for reference. Sprinkle some sugar all over the cake batter and figs.
- Place the cake in oven on the middle rack and bake for about 45 minutes or until a tooth pick or wooden skewer inserted in the center comes out clean.
- Once ready, allow to cool for 10-13 minutes in the pan before removing the cake from the pan. Drizzle some honey over cake while it is warm. Allow the cake to completely cool before cutting into. You can also allow the cake to cool first and when you are ready to serve, you can drizzle honey over each slice of cake. Enjoy!
Notes
Storing the Cake: Store the cake in air tight tight container in the fridge for up to 3 days. When you are ready to enjoy a slice, place in the microwave for ab 10 seconds or less to bring the cake back to room temperature.
