Instructions
Make the Dough
- Combine the warm milk, yeast and honey in a cup and mix. Set aside for 3 minutes until you see a foam appear on top.
- Now add the egg, melted butter and mix.
- In another large bowl, add the flour, dried herbs, fresh parsley, chives, salt and mix very well.
- Now pour in the liquid and stir with a wooden spoon, if using a stand mixer, mix on medium to low speed.
- Transfer the dough to a clean surface, and knead the dough for about 5 minutes or until it is smooth and when poked, springs back.Note: The dough will be semi sticky. Try to avoid using more flour, but if you find it too sticky, add a sprinkle of dough to the surface to help.
First Rise
- Place the dough in a large bowl and cover. Set aside in a warm place to rise for about 2 hours or until it has doubled in size.
Shape the Rolls
- When the dough has doubled in size, punch it down to release the air.
- Transfer the dough to a clean surface. Divide the dough into 12 equal pieces. I weighed my dough. Aim for about 59 to 61 grams each.
- Using your clean hands, shape each piece of dough into a smooth ball making sure to roll the dough on the counter at the end to smooth the seam. Repeat this step for the remaining 11 pieces.
- Butter a regular 9 x 13 baking dish and arrange the balls of dough. See image above for reference.
Second Rise
- Preheat Oven 375 F
- Cover the dish and set aside to rise again in a warm place for about 1 hour or until it’s puffy, supple and risen.
- Once the dough has risen, brush the rolls with an egg wash and top with flakey salt, sesame seeds and freshly cracked pepper.
Time to Bake
- Bake in the oven on the middle rack for about 37-40 minutes or until golden and top is hard to the touch ( aka crunchy). Make sure to keep an eye on them, because everyone’s oven temperature runs differently.
- Once they are baked and hot out of the oven, thinly slice Danish Creamy European Style Speciality Garlic Salt & Rosemary Salt and place them on top of the dough.
- Now watch them melt and do their magic. Your kitchen is going to smell real good!
