Easy to make 5 ingredient thumbprint cookies. Crispy around the edges and buttery melt in your mouth in the inside.
These cookies are seriously so easy to make and all you need to make them is 5 ingredients that you probably all ready have in your kitchen pantry. You can fill these cookies with jam, lemon curd ( you can find my recipe, here) or even date paste! These cookies are the perfect base for any cookie you want to make. If you want to make them almond or coconut, you can adjust this recipe and do 1 cup of all purpose flour and 1/2 cup of coconut flour or even almond flour. I have tried this recipe doing that and it came out amazing!

- 1 &1/2 cup all puporse flour ( or almond/ coconut flour)
- 1/2 cup powdered sugar (or coconut sugar)
- 1 & 1/2 sticks unsalted butter ( or 3/4 cup unsalted butter or coconut oil)
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract ( or lemon juice)

- Preheat oven 350 degrees.
- In large bowl, cream butter and powdered sugar for 3 minutes by hand or an electric hand mixer.
- Add salt, flour, vanilla extract and mix until everything is incorporated.
- Using an ice cream scooper, place dough between hands and form a small circle and place on a baking sheet lined with parchment paper.
- Then, using small measuring spoon, create an indent in each cookie.
- I tried baking the cookies both with the filling and without and they both came out good. I filled my cookies with lemon curd and berry jam.
- Place tray in the oven on the middle rack and bake for 15 minutes or until the edges turn golden.
- Once they are fully baked, place cookies carefully on a wire rack to cool before enjoying!
