Warm marinated olives is my new favorite healthy snack. This is a make ahead snack for those savory snack lovers. The spicy herb marinade takes less than 10 minutes to make, and requires at least 3 hours in the fridge for the olives to soak up all those delicious herbs and spices.
For this recipe, I made a warm marinate over a cold marinate, this is because the heat opens the pores of the olives and helps the olives soak up all those flavors. You can use any type of olive to make this. I prefer green olives, and if you do not like spicy food, then omit the red crushed peppers.

- 1 teaspoon smoked paprika
- 1 teaspoon red crushed peppers
- 2 dried bay leaves
- 2 lemon peels ( or the zest of one lemon)
- 3 springs of fresh thyme
- 3 cloves garlic
- 1/2 cup olive oil
- 1 cup olives
Ingredients

- On low to medium heat, add the olive oil in a small pan
- Once the olive oil is warm, add the bayleaves, garlic, smoked paprika, lemon peels, red crushed peppers and 1 spring of thyme.
- Let the spices and herbs steep in the warm oil for at least 5 minutes.
- Drain the olives that you are going to use and pour into a glass heat proof jar. Pour the marinated over the olives. Add the two spring thyme and close the jar. Shake the jar lightly and place in the fridge or in the kitchen to marinate for 4 hours.
